This pizza should serve about 4 people.
Ingredients
Pizza dough (store bought is fine – we tried making our own once, and it was definitely not as good as store bought)
1 chicken breast
3 tablespoons fresh basil chopped (it’s worth it to buy the fresh basil for this)
Fresh mozzarella (the kind that looks like a ball, not the shredded kind)
1 15 oz. can crushed tomatoes (San Marzano is the best, it really makes a difference with this pizza and is carried in most grocery stores)
Olive oil
Salt and pepper
Cornmeal (just enough to dust the rolling pin and pizza dough to prevent sticking)
Directions
1. Preheat oven to 400 degrees. Place your pizza pan or stone in the oven.
2. Season chicken breast with salt and pepper.
3. Heat a sauté pan on Med-High and add a tablespoon of olive oil to the pan. Cook the chicken breast, approximately 6-8 minutes per side. Cut through the middle of the chicken breast to make sure it is cooked the entire way through.
4. Shred or cut chicken into small pieces (we like to shred it using two forks). Set aside.
5. Dust rolling pin, hands, and pizza dough with cornmeal to prevent sticking. Roll out pizza dough into the shape of your pan (you can always add flour if needed).
6. Pour crushed tomatoes into a small bowl. With your hands, do some additional tomato crushing.
7. Spoon crushed tomatoes over the pizza dough, leaving room around the edge for the crust.
8. Slice fresh mozzarella and place slices over pizza (it is fine to leave space between each slice).
9. Spread pieces of chicken over pizza.
10. Chop 2 tablespoons worth of basil and sprinkle over the pizza.
11. Season pizza with salt and pepper. Drizzle with olive oil.
12. Bake pizza in oven for approximately 12-15 minutes.
13. Take pizza out of the oven. Chop the rest of the basil and garnish pizza with it.
14. Slice pizza into individual servings and enjoy!
